Baked Pistachio Salmon

Was cravin’ those omega 3’s and decided to bake salmon since it’s something I do not cook very often but love to eat. It was simply delicious!


Salmon (make sure filets are even in size/weight)
Salt and pepper to taste
Dijon mustard (about 1/2 cup)
Scallions (about 1/2 bunch, maybe less)
Crushed Pistachios (about 1/4 cup)

Pat salmon dry and season skin side with salt and pepper
Place salmon skin side down on parchment paper on a baking tray
Combine mustard and scallions until combined and rub on top of salmon
Sprinkle pistachios on top and press down gently to make sure they stick to the salmon
Baked at 400 degrees for 10-15 minutes or until desired done-ness


I served this with a side of roasted brussel sprouts
